Creamy Avocado Dip with Scallions

With a mix of caramelized and fresh scallions, plus avocado and yogurt, this dip has a taste and texture somewhere between onion dip and guacamole.

Ingredients

1 tablespoon neutral vegetable oil
3 large scallions, white and pale-green parts thinly sliced, dark-green parts trimmed, finely chopped
¾ teaspoon kosher salt, plus more
1 avocado, coarsely chopped
¾ cup plain Greek yogurt
Tortilla chips or pita chips (for serving; optional)

Preparation

  1. Step 1

    Heat oil in a small saucepan over medium. Add sliced scallions and a pinch of salt; cook, stirring frequently, until scallions just start to brown around the edges, about 3 minutes.

    Step 2

    Transfer scallions and oil to a medium bowl. Add avocado, yogurt, and remaining ¾ tsp. salt; stir to combine, lightly mashing avocado so mixture is slightly chunky. Taste and adjust seasonings. Top with finely chopped scallions. Serve with tortilla chips or pita chips alongside, if using.

  • Seriously!...ramps? I've been cooking a lonnnnnng time and never heard of them. Glad to hear I can substitute scallions which I'll do. Looks yummy though. Will let you know.

  • Ramps are like a wild onion that are harvested in the spring. I have a hard time getting my hands on them possibly because they've become so popular and also due to the destructive way they are typically harvested. Scallions and garlic in combo are my go to replacements.

  • I've never found ramps in any grocery store around here. I can substitute with leeks and scallions.

  • I have not made this recipe yet so went to the reviews. Why is everyone talking about RAMPS? There is not one review about the recipe, just about Ramps! Am I missing something here! can not find any mention of Ramps in this recipe at all, so why the discussion. Although the reviews were not at all helpful, I will try making this recipe, and yes I do know what Ramps are.

  • I'm confused. Why are people saying you can substitute scallions for ramps? The recipe doesn't mention ramps as an ingredient, only scallions. So how do ramps figure into this recipe? Great recipe, btw.

  • Love this recipe. It really does taste like a french onion dip, which I love, but far better than the packaged stuff and with an avo twist. Always looking for new ideas for avocados and dips and recipe is truly a win.
